The Extraction Process: Honoring the Heritage


The journey of premium cold-pressed groundnut (peanut) oil begins with sun-dried, high-quality kernels. In the traditional cold-press or "Ghanni" method, the peanuts are crushed using a heavy wooden or metal mortar and pestle at a very slow speed. This slow mechanical movement generates minimal friction, ensuring the temperature remains well below 49°C. Unlike refined oils that use high-heat steam and chemical solvents to strip every drop of oil, cold-pressing naturally separates the oil while keeping the peanut’s cellular structure and protein content intact.





The Natural Advantage: Unrefined and Unbleached



After extraction, the oil is allowed to settle naturally for several days. This gravitational sedimentation removes larger particles without the need for synthetic micro-filters or chemical "de-gumming" agents. The resulting oil is a vibrant, deep golden color with a distinct, rich aroma of roasted peanuts. Because it bypasses the industrial bleaching and deodorizing stages, the oil retains its natural lecithins and phytosterols, which are often lost in mass-produced alternatives.

Storage Best Practices: Maintaining Peak Freshness



Groundnut oil is naturally more stable than many seed oils, but it still requires proper care. Store your oil in a cool, dry area away from the heat of the stove. While refrigeration is not strictly necessary, it can extend the shelf life in warmer climates; note that the oil may become cloudy or solidify slightly when chilled, which is a sign of its natural, unrefined state. Always keep the container tightly sealed to prevent the air from oxidizing the delicate fats.


 

Culinary Versatility: From Sautéing to Seasoning


Cold-pressed groundnut oil has a higher smoke point than most unrefined oils, typically around 160°C to 175°C (320°F to 350°F). This makes it incredibly versatile for Indian and Asian cuisines. It is excellent for medium-heat sautéing, stir-frying, and tempering spices (tadka), where its nutty aroma enhances the dish. It also serves as a flavorful base for marinades or as a finishing oil for steamed snacks and salads.
